Description of the wine
From the vinification of 100% Chardonnay grapes. The origin of the grapes falls within the Le Marchesine di Biatta Giovanni & C. in the municipality of Passirano, in the province of Brescia. The harvest in the vineyard begins in September with manual harvesting in boxes of maximum 18 kg. White vinification in a pneumatic press with soft pressing of the whole grapes and separation of the 1st and 2nd fraction. After static and physical separation from the impurities of the must at low temperatures, selected yeasts are inoculated for fermentation in stainless steel tanks at a controlled temperature. This is followed by decanting and lowering the temperature to around 10°C to avoid malolactic fermentation. Once the "draft syrup" has been added, which contains a maximum quantity of 18g/lt of sugar to enhance the softness and "silkiness" of the wine, it is bottled, capped with a crown cap and laid down in a stack for the setting of foam. The vinification ends with refinement which takes place in the bottle for at least a minimum of 36 months.

Appearance, the wine has a straw yellow color with golden reflections, with a very fine and persistent perlage. The scent on the nose expresses a beautiful olfactory profile, fascinating for the persuasiveness and whimsy of the peach blossoms, honey and hazelnut opening up to a fresh, soft, satisfying taste. The taste at the sip recalls the next one up to a finish of great elegance.
