Passalacqua has roasted in Naples since 1948 using the slow indirect-flame method, and it still gives its blends names rather than numbers: Harem, Moana, Mexico, Manhoa, Elmir, Helca, Habanera, Black and Gold Vulcan. Each is its own recipe, not a step on one scale.
Beans and ground
- 500 g beans — Black Vulcan, the darkest, balanced Gold Vulcan, arabica-led Harem and decaffeinated DEUP.
- 250 g ground — Alambra in the classic Neapolitan style, plus Moana, Mexico and Harem 100% arabica in tins: beans and ground.
