Description of the wine
The production of this sensational Franciacorta Brut which boasts DOCG certification involves the use of blended Chardonnay, Pinot Bianco and Pinot Noir grapes. The origin of the grapes falls within the Le Marchesine di Biatta Giovanni & C. – Passirano, Brescia. The harvest takes place with entry into the vineyard in September and involves manual harvesting in boxes of maximum 18 kg. The vinification takes place in white in a pneumatic press with soft pressing of the whole grapes and separation of the 1st and 2nd fraction. After static and physical separation from the impurities of the must at low temperatures, selected yeasts are inoculated for fermentation in stainless steel tanks at a controlled temperature. This is followed by decanting and lowering the temperature to around 10°C to avoid malolactic fermentation. Once the "draft syrup" has been added, it is bottled, capped with a crown cap and laid flat in a stack for secondary fermentation.
Characteristics of this Franciacorta Brut Docg
Appearance, the wine has a bright straw yellow color, with a fine and persistent perlage. On the nose, the first impression of bread crust and yeast opens up to a composed and elegant olfactory profile. The taste has rich notes of exotic fruits, elderflowers and white chocolate, the perfect introduction to a fresh, clean, rounded taste. It has a very long finish with light hints of ginger.

An excellent wine as an aperitif, the Brut de Le Marchesine pairs well with rich appetizers based on cured meats and cheeses. The optimal serving temperature is 6°C.
